Cucumber Sandwich Recipe

When you think of cucumber sandwiches, you probably think of dainty sandwiches served with tea. The fact is that cucumber makes a great, hearty, healthy filling for sandwiches that are anything but dainty. Most cucumber sandwich recipes include cream cheese, but this recipe is dairy-free:

Ingredients:

2 slices bread of your choosing
1/2 cucumber, sliced into thin discs
1/2 tomato, sliced thin
1/4 red onion, sliced
1 T soy mayonnaise
1 T mustard
1 T olive oil
salt and pepper to taste
cayenne pepper to taste

Toast the bread to your liking. Spread one slice of bread with mustard and one slice of bread with mayonnaise. Layer cucumber on mayonnaise side of bread. Layer tomato and onion on top of cucumber. Drizzle tablespoon of olive oil over filling. Sprinkle with salt and pepper and cayenne if desired.

This is a great, refreshing summer sandwich full of antioxidants and vitamins. Enjoy!
