Oven Baked Onion Rings Recipe

Here's a recipe for crispy oven baked onion rings that doesn't have the saturated fat and calories of fried onion rings. It's dairy-free, vegan, and a great healthy alternative to the usual fried onion rings. If you don't want to use soy milk, you can use egg, or coconut milk instead.
Ingredients
1 large yellow onion, cut into rings
1 cup unsweetened soy milk
marinara sauce (optional)
Directions
Preheat oven to 400 degrees.
Spray a baking sheet with olive oil and set aside.
Put soy milk in one bowl, corn flour in a second bowl, and Panko crumbs in a third bowl.
Place onion rings in the bowl of soy milk. Take each ring and place in the bowl of corn flour, using your hands to make sure the ring is covered with flour. Dip ring back in the soy milk and place in the bowl of corn flour for a second coating.
Lay ring on the baking tray and repeat the process with the other onion slices.
Once all the onion slices have been dipped and placed on the baking tray, spray them lightly with olive oil and place in oven.
After 15 minutes, turn rings over and spray the other side with olive oil. Continue baking for another 15 minutes or until golden brown.
Remove from oven, let cool for five minutes, and enjoy!
