Bridal Shower

So things have been going very well over the past couple of weeks. I was eating more and more cooked until I couldn't take it any longer. I have been doing 100% raw since Monday and feel better already.

John is Greek Orthodox, his Easter was this past weekend and that dinner was the last type of cooked food I have eaten. I have a bridal shower to go to... which I organized... this Sunday so I want to make sure that I look and feel good for all of the pictures.

I made my raw hummus last night but used way too much garlic. My entire house still smells of it.

Went to a raw restaurant called Pure Food and Wine in NYC two weeks ago. Had an absolutely amazing meal! That was the first time I have ever eaten a raw meal that didn't taste raw. I can't wait to go back. I even ate an amazing raw ice cream sundae. I have no idea how they made all of that stuff but I HAVE to learn.

Love it

I love when my friends and family show interest in eating more raw foods and ask me questions on how to get started. My co-worker is getting married in two months and has been trying to eat healthier. She is a chronic dessert eater. She has two a day during the week and treats herself to three a day on the weekends. She is by no means overweight, but tells me that she wants to be lean and have clearer skin like me. We decided that we are going to try to prepare a raw dinner together for our boyfriends. She actually bought me a book for my birthday, 'The Complete Book of Raw Food'. I haven't had a chance to read all of the details, but so far I really like that there are a lot of really simple recipes... especially compared to some of the other raw books I own.

The vegan cake that I wrote about in my last entry was SO good. You have to try it out! I ended up rolling the dough into balls and placing them in the fridge. I actually bought some almonds to make some more but ended up eating them all before I had a chance to make it.

Thank you for all of the birthday wishes! I had a fabulous time with my friends and family... and even ate some pizza. Tasted just like I remember :)

Try it!

All I have to say is that if you haven't tried going raw then I highly suggest you try doing it. At least give it a week long trial period; you will notice a difference. I look so much healthier than I used to look and I feel like I have unlimited energy.

Yesterday I had some warm water with lemon when I woke up. About 30 minutes later I made myself some apple carrot juice. I took two apples and some raw almonds in to work to have later on in the day. John brought me a huge case of organic apples (I think there were 88 in there), so I am making my way through them. I made some raw hummus and cut up some carrots for dinner. Also enjoyed some fresh cantalope and a piece of this raw evolution brownie that I am now obsessed with. I ordered them online and now can't find the website... and I already threw out the wrappers (since I finished them up so quickly). Oh vey. I'll have to do some searching.

Oh, I just got my Excalibur food dehydrator in the mail. I have to admit that I haven't even taken it out of the box yet, but I've been so busy at work. I think that I am going to try to make some flax crackers this weekend. Oh, and I came across this recipe for a raw vegan chocolate cake.
Grind 1 cup raw almonds (do not soak). Keep grinding until gets doughy from the oils that are being released.
Add 2 tablespoons raw carob powder
Add 1 1/2 tablespoons raw honey
Continue to blend for 1 minute
Use a spatula to remove from blender and roll mixture into balls or form into a piece of cake.
I'm going to try this recipe out this weekend also. I'll let you know how it turns out... I'm keeping my fingers crossed.
