My first encounter with cilantro lime rice was at Chipotle and it was pretty good, but I really like this recipe for Cilantro Lime Rice found at Recipezaar. It’s healthy, low-fat, and uses brown rice instead of white rice.
3 cups cooked brown rice (or white)
1 teaspoon lime zest, minced
1-2 tablespoons fresh lime juice
2-3 tablespoons cilantro, finely minced
Toss lime zest, lime juice, and cilantro with the cooked rice. Serve warm or cold.
